winemaking
Selected from a small patch of Semillon down by the dam the fruit was picked in early April, well past its normal harvest period of mid February. By this stage of the year the softening berries had developed the rich golden flavours so valued in a dessert style wine. The fruit was crushed, settled and racked into 1 and 2 year old French hogheads for fermentation and maturation. After 14 months in oak the wine was blended and filtered once prior to bottling. Semillon is a popular dessert wine variety, its structure and elegance balances the intense richness and flavour, producing a wine that is intensely sweet with a clean and crisp finish.
